I LOVE BEETS!!!

I made this DELISH beet salad to have with my dinner tonight. It was SO freaking good that I had to post it! =) It's a super good way to eat the whole beet too. After cooking/cooling/peeling the beets, I just sauteed some onion and garlic in olive oil in a pan, added some balsamic vinegar, added a sliced beet till it was warm, threw in the greens and let 'em wilt down. It might just be my new favorite salad...

It's Official


So, after switching to a vegan diet to kill a kidney infection that three rounds of antibiotics couldn't take care of, I've decided to stay vegan. And the great thing- other than losing 15 pounds, feeling better than I have in years, and finally getting rid of the kidney infection- is that the food is SOOO good! My most recent find? Papa G's BBQ Tofu, made right here in Portland. Great with mashed potatoes and collard greens. Mmmmm... should be a tasty adventure!
